I had the pleasure to dine at Charlie Palmer’s restaurant Aureole in Las Vegas on several occasions. Going there is quite a treat. Apart from some of the best food I’ve ever tasted, the restaurant featured such an extensive wine list that it required a computerized menu to select one. Once you did, wine angels flew up a three story glass cellar to retrieve your favorite bottle of wine.
His new Aureole, located in Times Square, also highlights wine as an important part of your meal. In fact this restaurant has 16,000 bottles on premises with around 100 bottles under $100 displayed in a wine mezzanine area.
In addition, this incredible place has an 18-seat bar, an informal space for 64 diners offering bar food and a fancier 54-seat dining room. The parallel tasting menu includes diver sea scallop sashimi, slow cooked veal belly, grilled filet of beef, peach tarte tatin and more all paired with a variety of wines. The menu is $115 and the wine pairing is $65.
